Nyborg Distillery – Danish pioneer in organic production

In the port of Nyborg – at a good location on the E20 – a new meeting point for ‘spiritual’ and culinary experiences emerged. Since the opening in summer 2017, Niels and Nicolai Rømer, creative entrepreneurs and well-known organic pioneers, have been following the objective of creating an attractive place to stop on the way through Denmark – for locals as well as tourists.

In the distillery, the specialities are whisky, rum, gin, snaps (Aquavit) and brandy based on regional organic products – fruit from Fünen, the country’s third largest island. Experienced employees work with a passion to bring top quality into the bottle – and also produce bespoke spirits. At the Nyborg Distillery, customers can buy a whole barrel, which will be looked after according to their wishes, from the choice of fruit to the filling, including advice on storage, aromas and more.

Part of the building is used for gastronomy: with a bar, café and restaurant. The ambitious range includes organic cocktails made from in-house spirits, coffee and cake, daytime snacks and Smørrebrød, in the evening, regional Danish and Nordic dishes. A shop offers products from the distillery and also a selection from the Ørbæk brewery and from Mols Organic.

At the World Spirits Award, there was double gold for Organic Gin Distilled DEW 87°, Organic Single Malt Whisky Cask Strength, Ardor Isle of Fionia (World Spirits Award 2018 & Spirit of the Year 2018), gold for Organic Gin MIST 114°, Organic Gin Distilled Frost 92°, Organic Single Malt Whisky Ardor Isle of Fionia, and silver for Organic Rum Hurancán.

Fraxern is a mountain village in Vorarlberg with around 700 inhabitants. It is nestled on a sunny south-facing slope between Feldkirch and Dornbirn at around 900 metres above sea level. There is written evidence of the ‘Krisbeeren’, as cherries were called back then, as long ago as the 16th century. At the turn of the 18th and 19th centuries, there were over 10,000 standard trees here, providing a considerable source of extra income for the farmers, as the fruit was in demand even in neighbouring Switzerland. In the year 2000, only 2,000 trees remained and today, there are maybe only 200 still in full production.

Heidi and Armin Nachbaur cultivate over 50 trees on two steep slopes facing the Rhine Valley as a sideline. Dug up as wildlings in the neighbouring forests, they were grafted with regional varieties of cherries used for distilling kirsch. The cherries are picked without stems using long wooden ladders. This process is called ‘mälka’, because the hand movement resembles that of milking a cow. For around two weeks, work is carried out from six in the morning until eight in the evening, with five to ten helpers from the village and the surrounding area. All of them work for free and have ‘grown up with the standard tree’. Depending on the year and the weather, three to five tons are harvested, which are all refined in the in-house distillery. Customers can learn on site about the cultivation, varieties and care of the trees as well as their harvesting and processing. This means that the consumer can enjoy a regional, high-quality product whose production can be traced sip by sip. The maintenance of the standard trees is intended to keep the tradition alive in the municipality and make a small contribution to the preservation of a unique cultivated landscape.

Stock Polska – Prestige products with history

Polmos Lublin (known today as Stock Polska) was founded by the industrialist Emil Plage in Lublin in 1906 and was able to survive both world wars and the communist state leadership. The company was nationalised in 1948 and re-privatised in 2001. It traded on the Warsaw Stock Exchange until 2005 and was sold in 2006. The new owners, Oaktree Capital Management, purchased the spirits division from Eckes Stock in 2007 and thereby laid the foundations for the current Stock Spirits Group. The company has its headquarters in Luxembourg, its service centre in Great Britain and its production sites in the Czech Republic, Italy and Poland.

Stock dates back to the year 1884 when Lionello Stock founded a beverages business in Trieste. He purchased a distillery in 1920 in what is currently part of the Czech Republic with the aim of tapping into new markets. This was followed by distilleries, bottling plants and warehouses in Italy, Austria, Poland, Hungary and Yugoslavia. In the 1920s, Stock was one of the biggest companies of its kind in Europe.

After an absence of 70 years, Stock returned to Poland and began to manufacture at the historic site of Lublin, 150 kilometres south-east of Warsaw. Intensive investment led to the creation of the most modern distillery in Poland and a leadership position on the vodka market. Lots of Stock products are produced by traditional recipes. These classical brands appeal to connoisseurs all over the world. In return, work is constantly being done on innovations that correspond to modern tastes and new drinking cultures. Quality standards are constantly upheld in both areas, of course.

The quality of the products was recognised at the World Spirits Award with a gold medal for the Orkisz Spelt Vodka.
